HIP TIMES 

 As April begins we are all certainly getting more enthusiastic about the thought of getting into our gardens, in the case of city residents a community garden, a raised bed or a simple planting box on the balcony or window sill is in order. However we urge all city residents to avoid planting near or on your fire escape.

It is extremely important to keep you fire escape free and clear! Fire Fighter Dayna who will be linking with the new site to teach children fire safety in the kitchen might be plenty concerned with anything that obscures a safe emergency route plan.

Dayna is celebrating just being awarded a 501 c (3) designation and we wish her the very best, Dayna has been an integral part of fire safety for children across the country for a very long time along with her canine hero friend Sparkles the Fire Safety Dog.

So take it from Dayna and Sparkles and keep those fire escapes free and clear and our kid’s fire safe. 

Hip4Kids is happy to announce our cooking demos have launched this year for the ninth straight year of programming in our bid to combat childhood obesity, type II diabetes and cancer. The first “Cookshop” which we are now after nine  years “renaming” launched at P.S. 256 in Bedford Stuyvesant with the kind support of The New York Road Runners whom we hope to be working with soon again.

The pictures which are worth a thousand words will be posting to our new “Monthly Bulletin Board” and we would again like to thank Road Runners Foundation President Mr. Cliff Sperber, Coriel Gaffney, Chef Rob Burmeister and Hip4Kids staff diabetes educator Max Fleurival. In addition we would like to also thank all of the teachers, parents and the principal of P.S. 256 for the enthusiastic welcome. This coming week will see the presentation of the Hip4Kids “ HIP COOKING” Demo to two hundred parent coordinators which we have arranged with the gracious assistance of Melissa Gelber at The Department of Education here in New York City. The objective is to show the many parents who are so very active in education and decision making the effectiveness of our integrated educational curriculum available over www.hip4kids.org  and the practical use of “HIP COOKING” as a hands on approach for Mom, Dad, Caregivers and their children. 

This years Victory Garden Contest now in its ninth year has a new “judge” Ms. Linda Borghi of Abundant Life Farms who is our resident expert on Biodynamic farming will make the final decisions this fall. Don’t forget to take your pictures and send them in for Linda the Farmer.

On the note of the Victory Garden we are also pleased to announce our cooperation with Chef Billy Doherty Project Manager for School Food Plus at SchoolFoods and his exceptional effort to bring gardening to the classroom through The “Garden to Café “ Program spearheaded by SchoolFoods, New York State Agriculture and the many “Green “ proponents citywide. Hip4Kids is also looking forward to the combined effort with New York City Parks where we will reach out to all Community Gardeners to teach effective ways to cook the produce that they grow. 

The tentative date for our first community festival is May 29th in Harlem and we look forward to the participation of the over thirty community partners signed on with us for that event. We plan on five festivals this year and are very eager to launch our campaign; we have come a long way since our first festival in Marcus Garvey Park in Harlem eight years ago. 

We would also like to announce two new board members here at Hip4Kids ,Max Fleurival who has been a mainstay of our cooking demos, diabetes prevention education and advisory panel for three years is moving up to the board of directors and Adam Moore of Moore Creative Living   www.moorecreativeliving.com who was in the recent past Director of Recreation for NYC Parks & Recreation .When it comes to fitness professionals you cannot top Adam in our opinion. We will post the formal invite to the first festival once the planning is finished and look forward to reader comments…Have a very HIP Spring…now get growing! 


Feature Recipe

    

Spicy Tilapia -- pan seared and quick  --
  • One or Two Frozen Tilapia Filets
  • Garlic Powder
  • Lemon Slice
  • Hot Sauce (Tabasco or Frank's Hot Sauce)
  • Paprika
  • Ground Cayenne Pepper
  • Ground Black Pepper
  • Sliced Almonds
  • Spinach
  • Extra Virgin Olive Oil
  • Apple Juice

Thaw the filets in warm water and strain.  Wash spinach and drain (or spin it out).  Get your non-stick pan on med. heat.  When hot add olive oil, wait a minute, and add fish.  There are a lot of spices listed, you can do them in varying amounts or can leave off different ones entirely.  I like to simply dust the fish and pan with each powdered/ground spice above (not too much -- lightly).  Add a few dashes of the hot sauce to both fish and pan.  Quick squeeze of lemon.  Mix spices in pan with hot sauce.  When the fish is cooked on one side (half way through the filet), flip it, add sliced almonds, and dust very lightly with powdered/ground spices again.  Gently add enough apple juice to the pan (not fish) to get it simmering, mix with the spices, and reduce it.  Swish the reducing juice around every now and then.  When fish is cooked though (flakey with fork), add it to a bed of fresh spinach and scrape any remaining spices and yummies on to the fish. 

This recipe looks complicated, but it is actually really easy.
