All the News that’s HIP to Print
As we dive into summer and continue to
organize our upcoming summer health series
festivals in conjunction with multiple private,
not for profit and city entities we are also
transitioning to new donated space for our
offices and should have a final word on that
shortly.
We
are pleased to announce the participation this
year of Linda Borghi who will be the new judge
of our long running Victory Garden Contest.
Linda is a treasure to our local economy and a
powerhouse of knowledge with regards to organic
and Biodynamic farming. Linda is a vital link
for Hip4Kids as are the hundreds if not
thousands of small farmers amassing efforts to
engage the public to “Go Green” and “Buy Local”
The efforts to apply this to the general
marketplace and consumers at large is one of the
main pieces of our now ten year old mission
statement.
Linda is assisting with our summer and fall
initiatives to bring a market presence to our
larger events this year with the participation
of multiple small farmers like her who will
showcase the beauty of New York State produce.
We
intend to include multiple farmers within our
interactive festivals which will also highlight
fitness formats from several allies that range
from simple aerobic and stretching classes to an
arts/dance segment conducted by our friend Susan
at POI Arts. Please stay tuned for festival
dates as they become available.
As
a special highlight we are pleased to announce
that we have provided The First Lady of The
United States with a presentation requested by
her offices and hope to have news on that to
report as the summer develops and our Health
Fair Series comes into “full bloom”.
Hip4Kids is also pleased to announce the
collaboration of Urban Go Green and its allies
and we are indebted to its founder Osiris James
for the opportunity to become allied. Hip4Kids
mission statement drafted a decade ago also
proposed as one of its main features that if we
as consumers were to focus on seasonal eating
centered upon local buying that the residual
benefit to the environment and overall health of
consumers would be immeasurable in the reduction
of pollutants alone! Just across the Hudson, New
Jersey has started to ship the first of the
season’s Hot House Tomatoes which are incredibly
tasty; just ask a farmer about it! We hope NYC
and surrounding buyers will seek these out in
order to create Chef Jose Andres fantastic
recipe for this month.
On
that note Hip4kids would like to convey a very
special thanks to Chef Jose Andres of Washington
D.C for the recipe of the month and to all of
his team for their courteous assistance in
supplying the material.

Pan con tomate
Tomato bread
By Chef Jose Andres
Serves 4
2 big ripe tomatoes
(about ¼ pound)
2 slices rustic sourdough
bread, toasted
Spanish extra-virgin
olive oil to taste
Salt and pepper to taste
Cut the tomatoes in half.
Place a grater over a large mixing bowl.
Rub the open face of the tomato into the
grater until the flesh is gone. Discard
the skin. Whisk the olive oil into the
bowl. Season to taste with salt and
pepper.
To
finish
Spoon the tomato-oil
mixture onto the toast. Drizzle with a
little more oil. Serve.

sprinkling them onto anything you already like to
eat or drink. Chia Seeds don't have a flavor of
their own. Instead, they distribute the flavors of
food or drink that you add them to. This property
lets them take on the taste of that food, or amplify
the flavor of liquids. (Meaning when you cook with
them, the food will actually taste better!)
For example, you could sprinkle them onto: breakfast
cereal, yogurt, oatmeal, ice cream, juice, milk,
pizza, salad dressing, pasta, sandwiches....really,
anything that's moist enough to get the seeds to
stick to the surface...and you stay full much
longer, from eating much less food!

It seems far fetched, how can little seeds do all
that and more?
Get ready for a double shot of weight-loss benefits:
First: Chia Seeds help you feel full longer, and you
can actually watch the process work! Diet pills may

colon.
But what about glucose? Glucose and insulin levels
are important for preventing type-2 diabetes.
Starchy foods, sugary drinks, and other modern-day
diet options that convert quickly into sugars in the
body spike insulin levels. You can give your system
a break with fiber. Viscous fiber (that which
appears like a gelatin) slows down the conversion of
carbohydrates into sugars and helps normalize blood
glucose levels. That means it's beneficial to mix
Chia Seed in with food you already like to eat.
Blood sugar naturally rises and falls through out
the day. It can also be what makes you drowsy in the
afternoon. Dips and spikes aren't good for
consistent, healthy energy. The slowing of

conversion into sugar stabilizes metabolic changes,

watch your blood-sugar closely and ask your doctor
