Welcome to all of our new readers and as we begin March we would like to extend a very special thanks to Dr. Wayne Coates Professor Emeritus of The University of Arizona in Phoenix.

Dr. Coates has spent over 25 years in the effort to research Salvia Hispanica or Chia as it is often called. Salvia is an extremely important food crop from Pre-Columbian times and was valued above gold by the Aztecs and Mayans. You might have guessed by now that Salvia Hispanica is the “secret” ingredient that inures The Chocolate HIP Cookie with the wonderful health benefits it possesses.

Not to be confused with the novel gift item, food grade organic and Kosher Salvia Hispanica or Chia, which is what we use is THE most incredible functional food in the world in our opinion and in the opinion of myriad professional healthcare people, but don’t take our word for it ask any nutritionist who has studied this powerfully healthy commodity and can explain the health benefits.

 As an additional note if you refer to the article on the main page that speaks of chia and its incredible benefits to those suffering with diabetes you will be quite impressed.

Dr. Coates has devoted not only close to three decades on research but has implemented growing programs in several countries in order that a productive crop may be employed by rural farmers to help them create economies to support entire villages and populations. Again we would like to offer our sincere thanks and extreme gratitude to Dr. Coates for allowing us to publish his findings.

Hip4Kids is now working overtime on it’s ever popular Cookshops and is pleased to announce the upcoming series with the world renowned NYC Road Runners, our premier event with Road runners is March 16th at P.S.264 in Bedford Stuyvesant and we cannot wait. Point in fact to all of you runners out there Salvia is also referred to as “Running Food” it is the perfect low glycemic release in whatever it is mixed with and will give any runner a major edge.

The Road Runners Store sold out of Chocolate HIP Cookies just before their seasonal close and we hope to hit you runners with four new flavors including our Super Vegan Cookie when they re-open.

We continue our work with New York Alliance for Health, creating dialogue and offering input for the New York City Child Nutrition Reauthorization Act and are soon to be updating all of our readers and followers regarding a planned series of events with New York City Department of Parks & Recreation, we will keep you posted.

 

This month’s special recipe comes from one of the youngest, most “HIP” chefs we have ever had the pleasure to engage in our 10 year effort; Chef Nathan Godsey…this young man has graciously submitted one of his Five Star recipes for Tilapia.

 Nathan is not only very talented but a very community minded young man; we think he gets these terrific qualities from his Dad, Mr. Donny Godsey.

If you don’t know about Nathan make sure to look him up…he is a true star and a real TV personality. The recipe he is featuring was one he actually cooked on the Dr. Oz Show…..Impressive!

We hope to begin filming our television pilot shortly, it has taken the past month and a half to write and we would like to thank Mr. Sydney Iwanter formerly of FOX TV for all of his guidance, we plan to shoot in Brooklyn and then comes the expertise of Ms.Traci Mann…maybe we can hit a TV home run like Nathan.

We are planning a fundraiser for April with new operating partners FoodFight and in the interim thank everyone for their support, especially Jonah, Jim, Jim P. at creative labels, Mike P., Sarah and Margaret and all of the artisan bakers at Hudson Valley for the terrific job on the cookies…we hope to offer you a few more flavors within the next few months.

Feature Recipe

    

Spicy Tilapia -- pan seared and quick  --
  • One or Two Frozen Tilapia Filets
  • Garlic Powder
  • Lemon Slice
  • Hot Sauce (Tabasco or Frank's Hot Sauce)
  • Paprika
  • Ground Cayenne Pepper
  • Ground Black Pepper
  • Sliced Almonds
  • Spinach
  • Extra Virgin Olive Oil
  • Apple Juice

Thaw the filets in warm water and strain.  Wash spinach and drain (or spin it out).  Get your non-stick pan on med. heat.  When hot add olive oil, wait a minute, and add fish.  There are a lot of spices listed, you can do them in varying amounts or can leave off different ones entirely.  I like to simply dust the fish and pan with each powdered/ground spice above (not too much -- lightly).  Add a few dashes of the hot sauce to both fish and pan.  Quick squeeze of lemon.  Mix spices in pan with hot sauce.  When the fish is cooked on one side (half way through the filet), flip it, add sliced almonds, and dust very lightly with powdered/ground spices again.  Gently add enough apple juice to the pan (not fish) to get it simmering, mix with the spices, and reduce it.  Swish the reducing juice around every now and then.  When fish is cooked though (flakey with fork), add it to a bed of fresh spinach and scrape any remaining spices and yummies on to the fish. 

This recipe looks complicated, but it is actually really easy.

How easy is it to use?
Chia Seeds are actually one of the easiest things you can possibly add to your diet. It's as simple as sprinkling them onto anything you already like to eat or drink. Chia Seeds don't have a flavor of their own. Instead, they distribute the flavors of food or drink that you add them to. This property lets them take on the taste of that food, or amplify the flavor of liquids. (Meaning when you cook with them, the food will actually taste better!)
For example, you could sprinkle them onto: breakfast cereal, yogurt, oatmeal, ice cream, juice, milk, pizza, salad dressing, pasta, sandwiches....really, anything that's moist enough to get the seeds to stick to the surface...and you stay full much longer, from eating much less food!

It seems far fetched, how can little seeds do all that and more?

Get ready for a double shot of weight-loss benefits:
First: Chia Seeds help you feel full longer, and you can actually watch the process work! Diet pills may ask you to believe they work, but MySeeds Chia shows you. The fiber fills you up, and performs its important roles in the colon, but ISNT absorbed by the body to turn into extra calories and fat. Insoluble fiber is not digested. It is sometimes called 'roughage' and helps to clean the colon.

But what about glucose? Glucose and insulin levels are important for preventing type-2 diabetes. Starchy foods, sugary drinks, and other modern-day diet options that convert quickly into sugars in the body spike insulin levels. You can give your system a break with fiber. Viscous fiber (that which appears like a gelatin) slows down the conversion of carbohydrates into sugars and helps normalize blood glucose levels. That means it's beneficial to mix Chia Seed in with food you already like to eat.

Blood sugar naturally rises and falls through out the day. It can also be what makes you drowsy in the afternoon. Dips and spikes aren't good for consistent, healthy energy. The slowing of conversion of carbohydrates into sugar has the ability to create endurance. Carbohydrates are the fuel for energy in the body. Prolonging their conversion into sugar stabilizes metabolic changes, diminishing the surges of highs and lows creating a longer duration in their fueling effects. Protein fuels energy as well, and the protein in chia is complete. Once again, a double benefit for you.

With Chia Seeds you can deal a powerful 1-2 punch against Type-2 Diabetes risk-factors: excess weight and insulin spiking foods. Of course, there are many other benefits to Chia as well, such as healthy omega-3 oils, micro-nutrients, a full range of b-vitamins and more calcium by weight than milk. If you already have Type-2 Diabetes, it's important to watch your blood-sugar closely and ask your doctor about adding Chia Seeds to your diet. If you don't have this problem, it's not too late to stop it from ever hitting you.
